History and origin
Roast ham, aged cheese and a sweet touch of pepper
This tostada grew from the fondness of creative cafés for bringing savoury and sweet flavours together. Roast ham adds depth, aged cheeses bring character and pepper jam leaves a fruity, lightly spiced finish.
The inspiration comes from an Almería café’s Baeza, served on a mollete with a thin Lorenzana base, braised ham, Manchego, Parmesan and pepper jam. It is a house creation, naturally open to small changes of bread or cheese.
