Across many bars in Almería, a tapa is included with certain drinks — traditionally a beer, a glass of wine or mosto, grape juice before fermentation. House customs vary: the tapa may be selected for you or chosen, and more elaborate dishes may carry a supplement.
On the plate, the land connects market gardens, mountains and the Mediterranean. Provincial signatures such as chérigan and gurullos meet recipes documented in Alhama: migas on cold or rainy days, wheat, pumpkin or fennel stews, rabbit or chicken fritadas and charcuterie from the matanza. It is generous, seasonal cooking that tells the story of the place before the first bite.
Why these three? Because the tapa comes with the order served by the glass at the counter. Wine sits at the very origin of the word — covering the glass with a piece of bread or a slice so nothing could fall in; beer earned its place with its short measure, which renews the round and brings another tapa; and mosto keeps the ritual intact without alcohol, so nobody at the table is left out.
