What lies behind the trays

The province does not boast about its sweets, yet they are everywhere: in the almond and honey inherited from Moorish cooking, in the village oven turning out rosquillas each morning, in the boxes of mantecados the Alpujarra prepares from August, in the cone on the seafront.

I · The heritage

Almond, honey and anise

Almost everything now called traditional in Almería's pastry starts from three pantries: almonds from the sierra and the Andarax valley, rosemary and thyme honey, and anise. The Alpujarra's soplillos — egg white, sugar, almond and lemon — or the honey-and-almond alfajores pressed between wafers are cited as a Moorish legacy; the turrón one family in Olula de Castro still cooks over a wood fire uses the same ingredients.

The almond also has a visiting season: the almond trees of the valley and the Alpujarra blossom between late January and February, in the depths of low season. A reason to go up, and to come back down with a box.

II · The year

The sugar calendar

Many sweets only appear on set dates. Come in January or December and you will find things that do not exist in June — and the other way round.

  1. 16–17 January

    San Antón. In Alhama, local chronicles place buñuelos, chocolate and ponche beside the bonfires.

  2. Lent

    Papaviejos — potato fritters with sugar and cinnamon — and, in the Levante, the hornazo of the Día de la Vieja at mid-Lent.

  3. Holy Week

    Fried roscos, borrachillos and leche frita in Alpujarra homes; the capital's confiterías bring out their seasonal specialities.

  4. Summer

    Artisan ice cream all along the coast — the provincial council publishes an artisan ice-cream guide — and oven roscos that never miss a month.

  5. From August

    The mantecados of Laujar and Fondón go into the oven in early August to reach the Christmas boxes.

  6. Christmas and Epiphany

Village bakeries, city confiterías

In Alhama, sweets are bought at the bakery: family workshops such as El Túnel, dating back to 1860, or Productos Dicel, since 1942, where bread shares the counter with rosquillas, magdalenas and roscón. In the capital, the tradition is carried by the historic confiterías — La Dulce Alianza since 1888, El Once de Septiembre since 1891, Capri since 1940 — with their medias lunas, puff pastries and cakes.

In the Alpujarra the leading role belongs to the mantecado factories of Laujar and Fondón, working since the 1950s; on the coast and in the villages, to artisan ice-cream makers and long-standing churrerías. The capital's convents used to sell sweets through the turnstile; by 2022 that had ceased.

When are the Alpujarra mantecados baked?

The factories of Laujar de Andarax and Fondón start baking in early August to reach the Christmas boxes; the lemon mantecado "in blue paper" is the best known. Out of season there remain roscos, almond pastries and other oven-baked sweets.

Which sweet is eaten in Alhama for San Antón?

Local chronicles place chocolate-dipped fritters and ponche beside the bonfires on the night of San Antón, in January. The rest of the year, the oven-baked sweet of Alhama is the rosquilla from its bakeries, in anise and chocolate versions.

Do the convents of Almería still sell sweets?

Las Puras and Las Claras used to sell sweets through the turnstile; by 2022 the sales had stopped. That is why they do not appear here as addresses, only as a memory of the convent counter.
