Ohanes
In Ohanes, deep in Almería's Alpujarra, the alfajor changes scale: the paste of honey, sugar, toasted bread, nuts and spices is spread between wafers and becomes a torta, dense and spiced, cut into portions and passed around. The small bite becomes a sweet for a long table.
It is the local variant of a sweet with its own entry in the province, the Almerian alfajores — syrup, almond and wafers — Christmas classics. The Ohanes torta adds toasted bread and spices, and with them a deeper flavour, of the winter pantry.
It is a home sweet, with no known workshop: the kind that appears in December in the village kitchens, is cut with a knife and offered with no more presentation than the tray.
