Where it comes from

Almería (Feria, second half of August)

In the second half of August, Almería's fairground smells of hot sugar: among the Fair's characteristic flavours are churros with chocolate, waffles — those of the Marimar and Fenoy stalls among them — candyfloss, caramelised almonds and ice cream cones.

They are treats common to any fairground, with no history of their own to claim, but the Fair's bond with sweetness goes far back: the "merienda de los toros", a custom from 1668, already included little pastries for dessert. Three and a half centuries later, the custom is unchanged: stroll, smell, give in.
