Where it comes from

Purchena · Mojácar · Alhama de Almería (Dicel)

The torta de manteca hides nothing: lard, flour and sugar, kneaded and baked into a flat round. It is a winter affair, when the matanza's lard is at hand, and in many villages it comes out of the oven at the same time as the mantecados, perfuming the same kitchen.

In Purchena, homemade mantecados and tortas de manteca are baked for Christmas; in Mojácar it is described by its three ingredients and nothing more: lard, sugar and flour. A sweet as generic as it is loved, anchored in the places where it is made.

The most concrete anchor is in Alhama de Almería: Productos Dicel keeps it in its traditional pastry range, next to the Alhama rosquillas, aniseed roscos, torta de chicharrones and pan de aceite. With a coffee in front of it, it needs no introduction.
