Panadería San Ramón is the only bakery in Ohanes, and once a year it becomes the heart of the fiesta: here the roscos de San Marcos are baked, a dough of flour, salt and water kneaded by schoolchildren, baked at the bakery, blessed and handed out on the Sunday after the procession.
The roscos began as alms for the poorest, and the mayordomos, unmarried young men, still collect the money for the flour. San Marcos falls on 25 April and is celebrated on the nearest Sunday: the date to see it — and taste it — in context.
