Madrid
The suizo is a brioche-style bun made in Madrid’s pastry shops, recognisable by the ridge of sugar running along its back. You dunk it in your café con leche and that is that.
Its original name was “bollo de leche”, and it was served for breakfast and afternoon tea in Madrid cafés in the late 19th century. The version offered by the Café Suizo was such a success that people first called them “bollos del suizo” and finally just suizos. Nothing to do with Switzerland.
It has travelled well beyond Madrid: ordinary pastry in the province’s bakeries, though it has never displaced the local rosquilla on an Alhama counter.
