A Christmas sweet bread from the Alto Almanzora: bread dough with oil, milk, sugar, lemon and eggs, sugar on top. In Chirivel there are oil and honey tortas; in Alhama, Productos Dicel makes it.

Pan de aceite is everyday bread dough in its festive clothes. To the homemade dough go oil, milk, sugar, lemon zest, yeast and four beaten eggs, plus as much flour as it takes; it is baked with sugar on top, which toasts, and some tuck bits of almond into the dough. It is the Christmas sweet bread of the Alto Almanzora: bread for breakfasts and afternoon snacks in the weeks of celebration.

In Chirivel, in the Los Vélez district, the J. J. Martínez Asensio bakery makes torta de aceite and, in season, honey tortas with raisins, almonds or walnuts.

Closer to home, Productos Dicel makes it in Alhama de Almería as part of its traditional pastry range, next to the torta de chicharrones and the torta de manteca: the easiest way to try it without kneading.

How it is made at home

  1. Start from a home-made bread dough.
  2. Add oil, milk, sugar, lemon zest, yeast and four beaten eggs.
  3. Work in as much flour as it takes to get a workable dough; optionally, pieces of almond.
  4. Shape the loaf or flatbread and sprinkle sugar on top.
  5. Bake in the oven.
