History and origin
Butter, jamón york and cheese in a warm, familiar tostada
Mixta de york y queso brings a familiar combination to the tostada format. A thin layer of butter melts over the bread; cooked ham, ordered as york at the counter, and cheese are placed on top.
Warmth draws the layers together and lightly softens the cheese without turning the bread into a closed sandwich. Some cafés prepare their own cooked ham and others change the cheese, but the name mixta retains an easy-to-recognise composition.
It is a contemporary option in the regional café repertoire, not an established custom specific to Almería. It is often ordered as a media or entera with coffee, milk or juice.
