Octopus and noodles in a pot shaped by the economy of the ports
Fideos con pulpo brings the harbour into a spoonable pot. Octopus, noodles and potatoes cook over a sofrito with dried pepper, pimentón and spices. The noodles absorb part of the base while enough broth remains for the stew to arrive succulent and steaming.
The dish is associated with Adra, Balanegra and Berja. Its story reflects a practical fishing economy: octopus was cooked when it was an affordable catch while higher-priced fish went to market. Adra, the Alpujarra’s port, therefore connects the sea with nearby inland tables.
