Papas a lo pobre, fried egg and matanza meats together on one plate
Plato alpujarreño gathers several mountain flavours onto one plate. Papas a lo pobre form the tender, succulent base; fried egg, chorizo or longaniza, morcilla and serrano ham arrive on top or around them. Some kitchens add pork loin, adjusting the combination without changing its generous character.
The dish is shared by the Granada and Almería sides of the Alpujarra. In Laujar and the high villages it is part of the meals sought out by people exploring the comarca.
