The secreto is a small cut of pork prized for its marbling. Under fierce heat, its intramuscular fat melts, feeds the flesh and encourages a browned surface. The most legible preparation remains the simplest: grill or griddle, salt, a short rest, then slicing into strips wide enough to hold the juices.

Publications from Spain's Ministry of Agriculture list the secreto among the appreciated fresh cuts of Iberian pork and highlight the revaluation of once-overlooked pieces. That does not make every secreto Iberian: the breed's name should appear only when the restaurant can genuinely guarantee it.

On a page devoted to Alhama's specialities, this meat must be placed precisely. It belongs to the evolution of Spain's grill menus and turns up in Almería's restaurants, but no solid source ties it to a local origin. It brings a contemporary, carnivorous note to the journey, distinct from handed-down dishes like the ajillo stews — and a sober garnish is all it needs: it is chosen for its texture and its own strength.
