The tortilla de patatas unites three essential ingredients: potato, egg and olive oil. The potatoes cook gently until tender, are mixed with beaten eggs, and the whole returns to the pan, flipped in turn to set on both sides. Beneath a golden surface lie supple layers, never mistakable for a thin omelette.

The onion opens the most famous debate. It brings sweetness and moisture, yet many houses leave it out without betraying the dish. The interior set varies too: some seek a still-soft heart, others a firm slice. Better to present these choices as legitimate styles than to proclaim one absolute version.
